Here’s what the 144 family will be dining on this week:
Monday
Breakfast–Cereal, yogurt
Dinner– Baked salmon, spinach, corn, homemade breadsticks (I’m trying a breadstick recipe from the Happy to be at Home e-cookbook. I hear these breadsticks are the best… This could be a dangerous discovery!!)
Tuesday
Breakfast– scrambled egg whites and cheese, toast, yogurt smoothies
Dinner– Turkey meatloaf, carrots, broccoli (I found a stoneware loaf pan in my pantry last week. The instructions say to season it with something like a meatloaf before you use it for baking. So, guess it’s time for a meatloaf!)
Wednesday
Breakfast– Overnight French toast
Dinner out for Smiling Bull’s birthday
Thursday
Breakfast– Banana splits (bananas topped with yogurt, granola and berries)
Dinner–Adobo-rubbed pork tenderloin, applesauce, green beans, cornbread
Friday
Breakfast– Chocolate chip pancakes
Kid dinner– Pick your leftover night
(Grownup date night)
Saturday
Dinner– Slow cooker bbq pork sandwiches with fresh bread, salad, cut fruit
Sunday
Chicken fajitas, corn, rice, fruit salad, black bean salsa, tomato salsa, queso, chips
