WW black bean salsa chicken. You can look it up on weightwatchers.com. It had black beans, diced tomatoes, and 2% ched. cheese. I've been making it for years. Everyone always comments on how good it is! Sounds like you got lots of great ideas. I'll have to come back and look at the ideas when it's grocery time again.

I often pair my leftover chicken with salad for lunch the next day. I've been known to use it in fried rice and to chop it up, toss in some alfredo sauce and some pasta with green peas and mushrooms. Yum. Although, that might not be the best weight watchers wise. You could also do soups! I have to say also that grilled of fajita chicken is yummy with cottage cheese.

Chop it up and mix it with some mayo, some chopped pecans, chopped artichoke hearts, and some celery salt. Then either bake it on garlic toast or put it in sandwiches/tortillas. Yum!

Freeze it in smaller servings- use it to make chicken pot pies (mix chicken with cream of chicken soup and 1 can of chicken broth, add one can mixed veggies drained and add to store regridge pie crust- bake 1 hour), BBQ chicken sandwhcichs, chicken ceasear salas and chicken salad (mix chicken with chopped onion, chopped green bell pepper, chopped grapes, and mayo)
