Here’s what the 144 family will be dining on this week:
Monday
Breakfast— oatmeal with applesauce mixed in, milk
Mom lunch– fajita chicken on green salad
Kid lunch—chicken and pasta in thermos, grapes
Dinner—Chicken taco soup, cornbread, cut melon
Tuesday
Breakfast—scrambled egg whites and cheese, toast, yogurt smoothies
Mom lunch- fajita chicken on green salad
Kid lunch—almond butter and strawberry sandwich, cut melon, chex mix
Snacks—cut carrots, bell peppers, cucumbers and yogurt cheese, apple, banana
Dinner– Adobo-Rubbed Pork Tenderloin, pasta and butter, applesauce, spinach
Adobo –Rubbed Pork Tenderloin
serves 4, 5 WW points
24 oz pork tenderloin, cut into 3 or 4 oz pieces
3 Tablespoons Paprika
2 Tablespoons ground black pepper
2 Tablespoons kosher salt
1 Tablespoon chili powder
1 Tablespoon brown sugar
1. Preheat oven to 350.
2. Mix spices and rub mixture onto pork pieces
3. Heat oven-safe skillet over Medium High heat and pan-sear each side of pork pieces until golden brown.
4. Transfer pan to oven until pork is completely done (6 to 8 minutes for each inch of thickness.
Wednesday
Breakfast— cereal, yogurt
Mom lunch- Super Sandwich Stuffed with Chicken Salad (WW recipe)
Kid lunch– cut veggies and yogurt cheese dip, peanut butter & honey sandwiches, pretzels
Kid dinner– soy corn dogs, berries
Thursday
Breakfast— smoothie popsicles, granola bars
Mom lunch- Chicken taco soup
Kid lunch- turkey and cheese rollups on toothpicks, grapes, crackers
Snack- apple, banana, cheese stick
Dinner— roasted chicken, carrots, corn on cob, quinoa, salad
Friday
Breakfast—Chocolate chip pancakes
Dinner-Pizza

Looks fantastic! We are having a lot of pork this week, and one of the dishes is similar to your adobo rubbed pork, but with blue cheese on top…
