Here’s what the 144 family will be dining on this week:
Monday
Breakfast- scrambled egg whites with cheese, smoothies (OJ, frozen berries, oatmeal)
Lunch-Butternut squash soup, cornbread
Dinner-roasted chicken, salad, broccoli
** make bread, make extra soup for friends
Tuesday
Breakfast-banana smoothies, pancakes
Lunch- Spinach salad with reduced fat feta, oranges
Dinner- Salmon, couscous, spinach, cornbread
** make breakfast cookies
Wednesday
Breakfast- breakfast cookies, yogurt drinks
** This will be our first time to try these.
***Post note: I made these Tuesday and they were okay, but a little gummy the next morning. Anyone else have any good breakfast cookie recipes to share???
Breakfast Cookies
2 ½ cup whole wheat flour
½ cup protein powder
2 tsp baking powder
¼ tsp ground cloves
¼ tsp ground cinnamon
½ tsp ground nutmeg
1/8 tsp ground mace
1/8 tsp ground cardamom
¼ tsp sea salt
½ cup agave nectar
½ cup olive oil
4 egg whites
½ cup unsulfured blackstrap molasses
½ cup applebutter or applesauce
1 TBSP vanilla
2 TBSP plain low-fat yogurt
1 cup raisins
1 cup unsalted, raw slivered almonds
½ cup unsweetened dried cranberries
Preparation:
- Sift all dry ingredients and spices together in a large mixing bowl. Cream olive oil and agave nectar together until smooth.
- In separate bowl beat egg whites and add to olive oil mix. Mix well. Add molasses, applesauce, vanilla and yogurt and mix well. Combine wet and dry ingredients.
- Add raisins, cranberries and almonds. Mix and form dough into ball… it will be very thick.
- Wrap with plastic and refrigerate for about an hour. Preheat oven to 350. Line cookie sheets with parchment.
- Form batter into small balls. Place balls on cookie sheet on press down with fork. Bake 10 minutes, until lightly browned.
Lunch-tuna sandwich
Kid dinner– secret spaghetti sauce (defrost) over spaghetti
The secret spaghetti sauce is a concoction I whipped up last week.
My son doesn’t like red sauces, but I was determined to make it work last week. I threw carrots, onions and a half-jar of left over spaghetti sauce in the blender, then added a can of Italian seasoned diced tomatoes. This tasted good, but I was hoping to lighten the look up so I added a half can of kidney beans. I know, this sounds crazy, but I just had to try. It tasted a little bean-y so I added some tomato paste, whirred it some more, meanwhile browing turkey with Italian seasoning.
I put it all together on top of spaghetti and all three kids asked for seconds! I had to boil more spaghetti and so I knew I needed to freeze the leftover sauce! This was an amazing breakthrough!!
You’ll never know unless you try…
Thursday
Breakfast- yogurt and cereal
Lunch-Absolutely fabulous WW potato soup
Dinner-maple-brined pork chops, apples, quinoa
Friday
Breakfast-Oatmeal or hot cereal mix
Lunch- take boys out?
Kid dinner-Pick your leftover night
Saturday
Breakfast-egg white omelet, turkey sausage
Lunch- pizza (experiment)
Dinner-beer can chicken on grill, cob corn on grill, cut fruit
Sunday
Breakfast-waffles
Lunch- at birthday party
Dinner- Turkey brats

Your menu for this week sounds really good. I like the recipe that you posted for the breakfast cookies. I will definitely have to try it.
