Salad Saturday #1

Yesterday I decided that I would try out a new salad each week and post about it every Saturday. My goal in doing this is to find healthy eating options without getting stuck in a rut.

Are there enough salads so I can actually try a new (healthy) one and write about it each weekend? I don’t know. But I’m going to try.

Here’s what I ate Friday:

Since I hadn’t planned ahead, I had to go with what was in my refrigerator. I mixed bibb lettuce and spinach, then topped it with reduced-fat feta cheese and manadrin oranges.  I sprinkled my favorite store-bought dressing on top:

I have a new homemade salad dressing but I was all out of it… I sent it home with our New Year’s Eve houseguests and was out of maple syrup to make another batch. (Tune in next week…)

This salad was still yummy, simple, healthy.  I liked it and it was super-duper easy.

    See this is where I have issues with salads. I can’t stand the thought of mixing fruit in a salad. I guess I’m just a weirdo. The only salad I’ve ever had with fruit was a Greek salad that had grapes in it and it was OK (I drowned it in feta dressing, so…). I guess I’m just an old-fashioned tomatoes and cucumber girl, which can get boring after a while. You might just inspire me to branch out a little bit… maybe. :)

    This salad looks so fresh and with just enough sweet that it makes you want more… even though feta isn’t my thing. This looks better than some salads I have had in 5 star restaurants.
