Meal Plan Monday 5/11-17

Here’s what the 144 family will be dining on this week.

I’m trying to get back in the swing of posting this. It’s a great discipline to follow!

Monday: Maple Glazed Chicken, leftover grilled corn on the cob, watermelon, pineapple

** Since I’m posting after dinner tonight, I can say this was a slam-dunk meal all the way around! I wasn’t sure the kids would like the rub, but they all snapped it right up! Cha-ching!!

Maple Glazed Chicken

1 teaspoon paprika

1 teaspoon salt

½ teaspoon ground cinnamon

½ teaspoon ground black pepper

1 lb boneless, skinless chicken breast

2 Tablespoons maple syrup

1 Tablespoon butter

1 Tablespoon Dijon mustard

Preheat oven to 500 degrees.

Combine first five ingredients and rub onto chicken breasts.

Place prepared chicken onto cookie sheet sprayed with non-stick spray and bake in the top third of the oven for apx. 15 minutes.

While chicken is baking, prepare glaze in a small saucepan on the stove using remaining ingredients.

After 15 minutes, brush chicken with glaze and continue baking for 5 more minutes. Glaze again and continue baking for another 5 minutes or until done.

Tuesday: Baked salmon with broccoli and risotto. Cantaloupe Jello smiles for dessert.

Wednesday: Chicken soft tacos, black beans, pineapple and strawberries

Thursday: Easy Chicken Stir Fry Skillet (I’m giving this recipe a try for the first time.)

Friday: Hamburger for youngest, dinner out for the rest of us

Saturday: something grilled that I do not have to plan

Sunday: Maple brined pork, apples, potato pancakes
