		<description>Breakfast burritos

Make up a large batch on the weekend, then freeze them individually wrapped in paper towels in a large ziplock - take one out when needed, nuke for about 2 mins and you are ready to go.

I make these, and take one to work and heat &amp; eat it there.

Cook the scrambled eggs in a baking pan in the oven to save time - cut into rectangles. Add some cheese, some cooked bacon, sausage or ham and roll em up!

You can also do egg McMuffin type sandwiches and freeze - I personally haven&#039;t tried this though.

		<description>My kids really like Irresistible Double Chocolate Muffins from www.allrecipes.com.  They are made with whole wheat, flax and wheat germ and pumpkin.  Lots of good stuff.  They also LOVE Powerballs:

Powerballs
Makes 40-48
 
1 c. peanut butter
1 c. honey
3 c. old-fashioned oats
1/2 c. ground flaxseed
1 c. chocolate chips
1/2 c. chopped nuts, any kind
1/2 c. soft dried fruit, any kind
 
Mix together peanut butter and honey until smooth.  Gradually add oatmeal and flaxseed.  Add chocolate chips, nuts and dried fruit and gently mix in a stand mixer or smush together by hand.
 
Roll into ping-pong size balls.  Keep in fridge and they will freeze well too.
 
I thought they would be a sticky mess but they are not.  I wear gloves for rolling and make them small so the kids can pop the whole thing into their mouth.  These are SOOOO good!  I&#039;ve been using walnuts and cranberries.</description>

		<description>I love to do smoothies for breakfast, especially chocolate. Flax seed adds some omega 3&#039;s and staying power. Banana gives sweetness without the sugar. These last me all morning. Here&#039;s my recipe:

1 frozen banana
1 heaping spoonful of unsweetened cocoa
1 heaping spoonful of ground flax seed
1 tsp vanilla
1 tsp coconut oil
milk or kefir (enough to cover)

Blend until smooth. It should be thick enough to serve with a spoon. Serve in a parfait glass.

For variety, and especially in summer, we&#039;ll make island smoothies:

1/2 c canned pineapple
1 tsp vanilla
1 spoonful ground flax seed
1 tsp vanilla

		<description>While living in Switzerland, I learned of what is now one of my favorite breakfasts, even though we ate it for dinner there with bread. This is, Bircher Muesli. At night, add enough uncooked oats to a bowl that will feed everyone. Toss in any fruits you have on hand (chopped into bite-sized pieces), a bit of sugar if you like, and equal parts milk and yogurt. It should look a bit soupy, so that the oats can absorb the liquid.  Allow to sit in the fridge overnight and in the morning, all you have to do is portion it out. I really enjoy eating it low-sugar using a flavored yogurt and omitting sugar altogether. Protein, fiber, fruit, what&#039;s not to love!
