{"id":4522,"date":"2010-11-10T23:11:08","date_gmt":"2010-11-11T04:11:08","guid":{"rendered":"http:\/\/www.momstoolbox.com\/blog\/?page_id=4522"},"modified":"2010-11-11T00:19:47","modified_gmt":"2010-11-11T05:19:47","slug":"taco-pie","status":"publish","type":"page","link":"http:\/\/www.momstoolbox.com\/blog\/taco-pie\/","title":{"rendered":"Taco Pie"},"content":{"rendered":"<p>My mother used to make this when my father was not home for dinner.\u00a0 We loved it.\u00a0 My kids love it.<\/p>\n<p>Hope I get it right\u2014doesn\u2019t have to be exact.\u00a0 This is enough for about 8 big servings, I think.<\/p>\n<p>I use \u201clight\u201d versions of ingredients to make it lighter.<\/p>\n<ul>\n<li>2-3 lbs lean ground beef<\/li>\n<li>2 pkgs taco seasoning\u2014medium at least<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>2 cups corn (I use frozen)<\/li>\n<li>2 cans refried beans or black beans<\/li>\n<li>1 c sour cream<\/li>\n<li>1 lb shredded cheese\u2014Mexican mix is best<\/li>\n<li>2 c crumbled tortilla chips<\/li>\n<\/ul>\n<p>Brown meat.\u00a0 Add taco seasoning per directions.\u00a0 Salt and pepper.<\/p>\n<p>Add corn and heat.\u00a0 Add beans, mix well, heat.\u00a0 Add sour cream, mix well, heat.<\/p>\n<p>Add \u00bd the cheese, mix well.<\/p>\n<p>Crumble chips into bottom of large dish.\u00a0 Pour mixture into bowl.\u00a0 Make sure it has enough \u201cjuiciness\u201d because the chips will absorb a lot.\u00a0 Heat at 350 for about 30 min.<\/p>\n<p>Take out, sprinkle rest of cheese on top, heat until cheese is melted.<\/p>\n<p>It is even better the second day.<\/p>\n<p>This family favorite was shared by <a href=\"http:\/\/www.momstoolbox.com\/blog\/2010\/11\/11\/real-experienced-mom-judy-douglass\/\" target=\"_blank\">Real (Experienced) Mom, Judy Douglass<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>My mother used to make this when my father was not home for dinner.\u00a0 We loved it.\u00a0 My kids love it.
