{"id":4530,"date":"2010-11-10T23:22:20","date_gmt":"2010-11-11T04:22:20","guid":{"rendered":"http:\/\/www.momstoolbox.com\/blog\/?page_id=4530"},"modified":"2010-11-11T00:19:04","modified_gmt":"2010-11-11T05:19:04","slug":"swedish-pancakes","status":"publish","type":"page","link":"http:\/\/www.momstoolbox.com\/blog\/swedish-pancakes\/","title":{"rendered":"Swedish Pancakes"},"content":{"rendered":"<p>Recipe to serve 4.\u00a0 I triple it so we have some left.<\/p>\n<p>Sift together in large bowl:<\/p>\n<ul>\n<li>1 \u00bd c flour<\/li>\n<li>3 tbs sugar<\/li>\n<li>\u00bd tsp salt<\/li>\n<\/ul>\n<p>Separately, beat in a bowl until thick and piled softly:<\/p>\n<ul>\n<li>3 eggs<\/li>\n<\/ul>\n<p>Beat into eggs until blended:<\/p>\n<ul>\n<li>2 c milk<\/li>\n<li>2 tbs melted butter<\/li>\n<\/ul>\n<p>Add this to dry ingredients and beat until smooth.<\/p>\n<p>Heat griddle over med heat.\u00a0 Lightly grease with butter for each pancake. (You can spray instead, but it is not as good.)<\/p>\n<p>I use a 1\/3 c measuring cup for each pancake.\u00a0 Pour into pan and swirl to spread over bottom of pan.\u00a0 When lightly brown on bottom (won\u2019t take long) turn over and lightly brown.\u00a0 I usually have two frying pans going.\u00a0 Usually they will then slide out of pan onto plate.\u00a0 I put waxed paper or parchment between each pancake so they don\u2019t stick together, if I am serving later.\u00a0 When I am ready to serve, I remove the waxed paper, fold each pancake in quarters, arrange in a circle on a plate and warm in the microwave.<\/p>\n<p>Serve with lingonberries and sour cream or whipped topping.<\/p>\n<p>This family favorite was shared by <a href=\"http:\/\/www.momstoolbox.com\/blog\/2010\/11\/11\/real-experienced-mom-judy-douglass\/\" target=\"_blank\">Real (Experienced) Mom, Judy Douglass<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Recipe to serve 4.\u00a0 I triple it so we have some left.
