Hope you like it, too&#8230;<\/p>\n<p><strong>Chicken Salad with Apple and Basil<\/strong><\/p>\n<p>4 boneless, skinless chicken breasts<\/p>\n<p>4 teaspoons kosher salt<\/p>\n<p>1 teaspoon black pepper<\/p>\n<p>\u00bc cup fresh lime juice (2-3 limes)<\/p>\n<p>1 Tablespoon rice vinegar<\/p>\n<p>2 Tablespoons brown sugar<\/p>\n<p>4 scallions (white and green parts) thinly sliced<\/p>\n<p>2 Granny Smith apples, diced<\/p>\n<p>1\/3 cup roasted peanuts, roughly chopped<\/p>\n<p>2 Tablespoons thinly sliced mint<\/p>\n<p>\u00bd cup thinly sliced fresh basil<\/p>\n<p>Pound chicken to even thinness and place in large saucepan. Add enough water to cover the chicken by \u00bd inch.<\/p>\n<p>Add 3 teaspoons of the salt and \u00bd teaspoon on the pepper. Bring to a gentle simmer. Cook until no pick remains, 8-10 minutes. Transfer chicken to bowl of ice water and set aside for 5 minutes.<\/p>\n<p>In large bowl combine the lime juice, vinegar and sugar, stirring until sugar dissolves.<\/p>\n<p>Add scallions and apples and toss.<\/p>\n<p>Drain chicken and pat dry. (You could also prepare the chicken the day before, drain the water and refrigerate overnight.)<\/p>\n<p>Dice chicken and add to apple mixture.<\/p>\n<p>Add peanuts, mint, basil and remaining salt and pepper.<\/p>\n<p>Enjoy!<\/p>\n<p>(If you have any left over, it is still good the next day. )<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-207\" title=\"momflower\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2008\/07\/momflower.jpg\" alt=\"momflower\" width=\"80\" height=\"40\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I found this one to be a refreshing, crunchy twist on a chicken salad.
