{"id":13736,"date":"2012-06-06T10:53:20","date_gmt":"2012-06-06T15:53:20","guid":{"rendered":"http:\/\/vinesleuth.com\/uncorked\/?p=1910"},"modified":"2012-06-06T10:53:20","modified_gmt":"2012-06-06T15:53:20","slug":"wine-and-cheese-pairing-at-old-hickory-steakhouse-in-the-gaylord-opryland","status":"publish","type":"post","link":"http:\/\/www.momstoolbox.com\/blog\/wine-and-cheese-pairing-at-old-hickory-steakhouse-in-the-gaylord-opryland\/","title":{"rendered":"Wine and Cheese Pairing at Old Hickory Steakhouse"},"content":{"rendered":"<h3><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020401.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"Old Hickory Wine &amp; Cheese: Old Hickory Steakhouse\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020401.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/a><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/Old-Hickory-Wine-and-Cheese-Pairing.jpg\"><br \/>\n<\/a><\/h3>\n<p>I know wine and cheese go together, and I\u2019ve never had a problem consuming either (together or separately) but I\u2019ve never been a foodie or altogether too \u2018fancy,\u2019 so sometimes the &#8216;fancier&#8217; cheeses offer a bit of intimidation for me.<\/p>\n<p>I was in Nashville earlier this year, staying at the Gaylord Opryland for a blogging conference, when I had my first big education on wine and cheese&#8230; and it was quite tasty and decadent!<\/p>\n<h3><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/Old-Hickory-Wine-and-Cheese-Pairing.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"Old Hickory Wine and Cheese Pairing\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/Old-Hickory-Wine-and-Cheese-Pairing.jpg\" alt=\"\" width=\"500\" height=\"373\" \/><\/a><\/h3>\n<p>I was interviewing Richard Peterson, the sommelier of the hotel\u2019s <a href=\"http:\/\/www.gaylordhotels.com\/gaylord-opryland\/nashville-tn-dining-activities\/nashville-tn-restaurants\/old-hickory-steakhouse\/\" target=\"_blank\">Old Hickory Steakhouse<\/a>,\u00a0about his wine experiences, when I learned about his incredible cheese experiences, and role as Maitre Fromager, too. (He trained in New York at a place where the they treat the cheeses like spa guests with salt water baths and the like.)<\/p>\n<p>At the conclusion of the interview, he suggested I come back to try a wine and cheese tasting. Of course I jumped at the chance! There was no way I was going to let that opportunity pass!<\/p>\n<h3>The wines<\/h3>\n<p>When I arrived, Richard introduced me to the wines he had selected to pair with the cheeses:<\/p>\n<ul>\n<li>Urban Riesling<\/li>\n<\/ul>\n<p><a href=\"http:\/\/vinesleuth.com\/uncorked\/wp-content\/uploads\/2012\/06\/P1020372.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-1882 alignnone\" title=\"Old Hickory Wine and Cheese: Urban Riesling\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020372-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<ul>\n<li>Blue-Eyed Boy Shiraz<\/li>\n<\/ul>\n<p><a href=\"http:\/\/vinesleuth.com\/uncorked\/wp-content\/uploads\/2012\/06\/P1020374.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"Old Hickory Wine and Cheese: Blue-Eyed Boy Shiraz\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020374-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<ul>\n<li>Veuve Clicquot Champagne<\/li>\n<\/ul>\n<div><a href=\"http:\/\/vinesleuth.com\/uncorked\/wp-content\/uploads\/2012\/06\/P1020375.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-1884\" title=\"Old Hickory Wine &amp; Cheese: Veuve Cliquot\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020375-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/div>\n<div><\/div>\n<ul>\n<li>Royal Tokaji<\/li>\n<\/ul>\n<div><a href=\"http:\/\/vinesleuth.com\/uncorked\/wp-content\/uploads\/2012\/06\/P1020376.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-thumbnail wp-image-1885\" title=\"Old Hickory Wine &amp; Cheese: Royal Tokaji\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020376-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<h3>And the Cheese:<\/h3>\n<p>Next Richard introduced me to Jess, his protege, who would be taking care of me in the cheese realm.<\/p>\n<p>She walked me through the cheese cart (and what a cart it was!!)<\/p>\n<p><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020355.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"Old Hickory Wine &amp; Cheese: Cheese Cart\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020355.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/a><\/p>\n<p>She explained the cheeses Richard had set up for me and answered my questions about a few others that looked interesting.<\/p>\n<p>The cheeses she and Richard selected for me were:<\/p>\n<ul>\n<li>La Tur<\/li>\n<li>Cabot Clothbound Cheddar<\/li>\n<li>Green Hill<\/li>\n<li>Shropshire<\/li>\n<\/ul>\n<p>Jess explained that learning about the cheeses has its challenges, but the most unexpected learning curve of the job was learning how to use utensils as her fingers in handling the cheeses to serve them to guests. I hadn\u2019t really thought about that one, but I could see how it would be tough, although she was quite deft at carving, slicing, serving and replacing the wheels of cheese on the cart.<\/p>\n<p>Here she is in action:<\/p>\n<p><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020369.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1881 aligncenter\" title=\"Old Hickory Wine &amp; Cheese: Jess\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020369.jpg\" alt=\"\" width=\"400\" height=\"534\" \/><\/a><\/p>\n<p>Once she was finished serving the cheese, she offered a bit of advice.<\/p>\n<p>\u201cThey are going to bring you a basket of breads, but I would just eat the cheese as it is,\u201d she said.<\/p>\n<p>\u201cYou mean with just a knife and fork?\u201d I asked.<\/p>\n<p>\u201cYes!\u201d she responded enthusiastically.<\/p>\n<p>I felt quite hedonistic at that point.<\/p>\n<p>Just cheese and wine? No bread or crackers? No you\u2019re talking!<\/p>\n<p>Here&#8217;s how it went:<\/p>\n<h3>Urban Riesling and La Tur<\/h3>\n<p><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020381.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"Old Hickory Wine &amp; Cheese: Urban Riesling &amp; La Tur\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020381.jpg\" alt=\"\" width=\"500\" height=\"667\" \/><\/a><\/p>\n<p>I took my first bite of the <a href=\"http:\/\/www.murrayscheese.com\/prodinfo.asp?number=00000000210\" target=\"_blank\">La Tur<\/a>\u00a0cheese\u00a0and was completely taken in by its creamy, buttery flavor. My notes read: \u201cI feel like I am eating butter and it\u2019s okay!\u201d<\/p>\n<p>I felt like I was eating ice cream (or butter), except it wasn&#8217;t cold&#8230; \u00a0it was just all that creamy decadence.<\/p>\n<p>The sweetness and hint of tangy apple in the riesling together with the salt in the cheese combined to make a smooth, delicious creamy flavor in my mouth. I savored every single bite and sip of the two together. I would definitely like to enjoy this pairing again!<\/p>\n<p>&nbsp;<\/p>\n<h3>Next up was the Australian Shiraz and the Cabot Cloth-bound cheddar.<\/h3>\n<p><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020380.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1887 aligncenter\" title=\"Old Hickory Wine &amp; Cheese: Shiraz &amp; Cheddar\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020380.jpg\" alt=\"\" width=\"500\" height=\"667\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>I fell in love with the cloth-bound cheddar at first bite&#8230; so much so that I had to stop and tweet @Cabot to let them know!<\/p>\n<p>The tangy flavor of the cheddar together with the Blue-Eyed Boy Shiraz put me in heaven. This combination was definitely bolder than the first and I loved it. My husband would definitely dig this one, too. (He&#8217;s not one who is much for soft cheeses, so this would be right up his alley.)<\/p>\n<p>I was also served some chocolate dusted almonds and, wow, what a combination the three made!! Together they made my mouth tingle!<\/p>\n<p>&nbsp;<\/p>\n<h3>Then it was time for bubbles: Veuve Cliquot with Green Hill<\/h3>\n<p><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020384.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1889 aligncenter\" title=\"Old Hickory Wine and Cheese: Veuve Clicquot and Green Hill\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020384.jpg\" alt=\"\" width=\"500\" height=\"667\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>I always love bubbles, and Veuve Clicquot never disappoints, but adding the Camembert-style buttery deliciousness of\u00a0<a href=\"http:\/\/www.sweetgrassdairy.com\/\" target=\"_blank\">Sweet Grass Dairy Green Hill<\/a>\u00a0really made the taste sensational!<\/p>\n<p>Jess suggested I skip the rind and I took her advice. As I got closer to it, the flavor became stronger&#8230; and then a bit too strong for my taste. I liked the luscious creaminess of the center, though!<\/p>\n<p>You may notice that my bubbles were served in a white wine glass rather than a flute. Give that a try sometime at home and let me know what you think. The wine isn&#8217;t as effervescent, but the flavor presents itself in a fuller way.<\/p>\n<p>&nbsp;<\/p>\n<h3>And on to Royal Tokaji with Shropshire<\/h3>\n<p><a href=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020388.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"Old Hickory Wine and Cheese: Shropshire &amp; Tokaji\" src=\"http:\/\/www.momstoolbox.com\/blog\/wp-content\/uploads\/2012\/06\/P1020388.jpg\" alt=\"\" width=\"500\" height=\"667\" \/><\/a><\/p>\n<p>This was the pairing I would have been least likely to match on my own, so I was thankful to be in the hands of experts.<\/p>\n<p>The Shropshire cheese is a bold, stinky cheese and the Royal Tokaji is sweet and almost syrupy. The Tojaji reminded me of the Anthony Road Rielsing Trockenbeeren, but not as thick and sultry.<\/p>\n<p>Together, the bold cheese and the sweet wine balanced each other beautifully, each enhancing the other. Again, it was the tang and the sweet that came together to make Ratatouille-like fireworks in my mouth.<\/p>\n<h3>So what did I think of the wine and cheese pairing at Old Hickory?<\/h3>\n<p>I was quite thankful of Richard and Jess and their expertise in putting these flavors together for me. It was a stellar experience in extravagant tasting&#8230; and one I could not have come up with on my own.<\/p>\n<p><strong>Their training was definitely put to my benefit and opened my eyes to a whole new experience.
