Today we are sharing her first recipe, Tortilla-crusted Chicken with Fajita Vegetables &amp; Mexican Black Beans.<\/p>\n<p>I&#8217;ll report back soon on her blog, <a href=\"http:\/\/stolenmomentscooking.com\/\" target=\"_blank\">Cooking During Stolen Moments<\/a> on how I did in preparing it and what my family thought.<\/p>\n<p>But without further adieu, check it out and imagine your family enjoying it&#8230; (as you enjoy a stress-free preparation!)<\/p>\n<p><strong>Tortilla Crusted Chicken with Fajita Veggies<\/strong><\/p>\n<ul>\n<li>1 green pepper<\/li>\n<li>1 onion<\/li>\n<li>2 cloves garlic<\/li>\n<li>2 green onions<\/li>\n<li>1 tomato<\/li>\n<li>2 1\/2 c. tortilla chips<\/li>\n<li>1 &#8211; 2 lb. boneless, skinless chicken breasts<\/li>\n<li>1 T. + 2 t. blackening or taco seasoning, divided<\/li>\n<li>3 T. butter<\/li>\n<li>1 T. olive oil<\/li>\n<\/ul>\n<p><a href=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/10minutes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3133\" title=\"10minutes\" src=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/10minutes.jpg\" alt=\"\" width=\"26\" height=\"35\" \/><\/a><strong>about 10 minutes<\/strong> Slice pepper and onion. Place in a bowl or plastic baggie and refrigerate. Mince garlic and slice green onions into one inch pieces. Place in a separate bowl or plastic baggie and refrigerate. Slice the tomato and refrigerate.<\/p>\n<p><a href=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/5minutes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3105\" title=\"5minutes\" src=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/5minutes.jpg\" alt=\"\" width=\"26\" height=\"35\" \/><\/a><strong>about 5 minutes<\/strong> Place tortilla chips in a plastic bag and finely crush with a rolling pin.<\/p>\n<p><a href=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/10minutes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3133\" title=\"10minutes\" src=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/10minutes.jpg\" alt=\"\" width=\"26\" height=\"35\" \/><\/a><strong> about 10 minutes <\/strong> Place chicken breasts in a plastic bag or between pieces of waxed paper. Pound thin with a rolling pin or meat mallet. Sprinkle both sides with 1 T. blackening or taco seasoning. Refrigerate until baking.<\/p>\n<p><a href=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/5minutes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3105\" title=\"5minutes\" src=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/5minutes.jpg\" alt=\"\" width=\"26\" height=\"35\" \/><\/a><strong>2 minutes + 15 minutes baking time<\/strong> Melt butter. Firmly press crushed tortilla chips onto both sides of the chicken. Place tortilla-crusted chicken on a baking sheet and drizzle melted butter on top. Bake at 350 degrees for about 15 minutes, until fully cooked. Meanwhile, heat the olive oil in a skillet. Add the sliced onions and green peppers and cook over low heat for 5 minutes. Add the garlic, green onions and remaining 2 t. blackening or taco seasoning. Continue cooking another 2 minutes. Add the sliced tomato, toss to combine and cook just until heated through. Serve with the baked chicken.<\/p>\n<p><a href=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/05\/mexican_black_beans.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2244\" title=\"mexican_black_beans\" src=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/05\/mexican_black_beans.jpg\" alt=\"\" width=\"480\" height=\"360\" \/><\/a><br \/>\n<strong>Mexican Black Beans<\/strong><\/p>\n<ul>\n<li>1\/2 red bell pepper<\/li>\n<li>1\/4 c. cilantro<\/li>\n<li>1 can black beans<\/li>\n<li>1\/2 c. frozen corn<\/li>\n<li>1\/2 c. beef or chicken stock\/broth<\/li>\n<li>1 1\/2 t. cumin<\/li>\n<li>1\/2 t. garlic powder<\/li>\n<li>Salt, to taste<\/li>\n<\/ul>\n<p><a href=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/5minutes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3105\" title=\"5minutes\" src=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/5minutes.jpg\" alt=\"\" width=\"26\" height=\"35\" \/><\/a><strong>about 5 minutes<\/strong> Dice red bell pepper; refrigerate until using. Dice cilantro; refrigerate until using.<\/p>\n<p><a href=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/5minutes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-3105\" title=\"5minutes\" src=\"http:\/\/stolenmomentscooking.com\/wp-content\/uploads\/2010\/12\/5minutes.jpg\" alt=\"\" width=\"26\" height=\"35\" \/><\/a><strong>+ 5 minutes cooking time<\/strong> Rinse and drain black beans. Combine all ingredients in a skillet.
