{"id":860,"date":"2008-10-19T23:50:51","date_gmt":"2008-10-20T04:50:51","guid":{"rendered":"http:\/\/www.momstoolbox.com\/blog\/?p=860"},"modified":"2012-01-07T17:26:58","modified_gmt":"2012-01-07T23:26:58","slug":"menu-plan-monday-for-october-20-26","status":"publish","type":"post","link":"http:\/\/www.momstoolbox.com\/blog\/menu-plan-monday-for-october-20-26\/","title":{"rendered":"Menu Plan Monday for October 20-26"},"content":{"rendered":"<p>Here&#8217;s what the 144 family will be dining on this week:<\/p>\n<p><strong>Monday<\/strong><\/p>\n<p>Breakfast- scrambled egg whites and cheese, toast, yogurt smoothies<\/p>\n<p>Mom Lunch- Taco Soup<\/p>\n<p>Dinner for Discussion Group- microwave lasagna, tossed salad, garlic bread<\/p>\n<p><a href=\"http:\/\/www.weightwatchers.com\/food\/rcp\/index.aspx?recipeid=95171\">Weight Watchers Apple-Cinnamon Wontons a la Mode<\/a><\/p>\n<blockquote><p><strong>Microwave Lasagna<\/strong><\/p>\n<p><em>9 generous servings at 6 WW points each<\/em><\/p>\n<p>Need: 9&#215;9 glass or other microwavable pan<\/p>\n<p>12 oz turkey sausage<\/p>\n<p>1 jar spaghetti sauce<\/p>\n<p>28 oz can crushed tomatoes with Italian seasoning<\/p>\n<p>\u00bd teaspoon dried basil<\/p>\n<p>\u00bd teaspoon garlic powder<\/p>\n<p>16 oz fat free ricotta cheese<\/p>\n<p>1\/3 cup reduced fat parmesan cheese<\/p>\n<p>1 Tablespoon chopped parsley<\/p>\n<p>2 egg whites, lightly beaten<\/p>\n<p>\u00bc teaspoon pepper<\/p>\n<p>1 cup part skim mozzarella cheese, divided<\/p>\n<p>6 dry lasagna noodles<\/p>\n<p>Spinach Leaves<\/p>\n<p>How to do it:<\/p>\n<ol type=\"1\">\n<li>Brown turkey sausage.<\/li>\n<li>Heat next 4 ingredients until bubbly.<\/li>\n<li>Combine ricotta, parmesan cheese, parsley (reserve some for garnish), egg whites and pepper.<\/li>\n<li>Spoon 1\/3 of tomato sauce to cover bottom of pan.<\/li>\n<li>Arrange 3 noodles over sauce.<\/li>\n<li>Spread half of cheese mixture over noodles and top with layer of spinach and half of mozzarella.<\/li>\n<li>Repeat layers with sauce as final layer.<\/li>\n<li>Cover and vent, then microwave on high 6 minutes.<\/li>\n<li>Microwave on med\/high (70%) for an additional 20 minutes.<\/li>\n<li>Let rest, covered, for 12-15 minutes. **Resting time is critical to complete cooking time for noodles.<\/li>\n<\/ol>\n<\/blockquote>\n<p style=\"text-align: left;\"><strong>Tuesday<\/strong><\/p>\n<p>Breakfast- pancakes with berries<\/p>\n<p>Dinner&#8211; individual mini meatloaves, peas<\/p>\n<blockquote><p><strong>Individual Mini Meatloaves\u00a0 <\/strong><\/p>\n<p><em>(5 WW points per loaf)<\/em><\/p>\n<p>Need mini loaf pan<\/p>\n<p>\u00be cup ketchup, divided<\/p>\n<p>\u00bd cup quick-cooking oats<\/p>\n<p>\u00bc cup minced onion<\/p>\n<p>2 Tablepoons chopped parsley ( or 1 \u00bd T dried parsley)<\/p>\n<p>1 Tablespoon brown sugar<\/p>\n<p>\u00bc teaspoon salt<\/p>\n<p>\u00bc teaspoon pepper<\/p>\n<p>2 egg whites, lightly beaten<\/p>\n<p>1 \u00bd pounds ground turkey<\/p>\n<p>How to do it:<\/p>\n<p>1. Preheat oven to 350.<\/p>\n<p>2. Combine \u00bd cup ketchup, oats, onion, parsley, sugar, salt, pepper and egg whites. Mix well.<\/p>\n<p>3. Add turkey and stir just until blended.<\/p>\n<p>4. Divide into 6 equal portions and press into prepared mini- loaf pans.<\/p>\n<p>5. Brush remaining ketchup onto loaves.<\/p>\n<p>6. Bake for 25 minutes, until done.<\/p>\n<p>7. Let stand 10 minutes before serving.<\/p>\n<p>8.\u00a0 Sprinkle with parsley and serve.<\/p><\/blockquote>\n<p><strong>Wednesday<\/strong><\/p>\n<p>Breakfast- English muffins and peanut butter, yogurt smoothie popsicles<\/p>\n<p>Mom Lunch- Tuna sandwhich, apple<\/p>\n<p>Kid dinner-soy corn dogs, honey carrots, cut fruit<\/p>\n<p><strong>Thursday<\/strong><\/p>\n<p>Breakfast- oatmeal (add smashed banans)<\/p>\n<p>Moms Lunch- <a href=\"http:\/\/www.momstoolbox.com\/blog\/absolutely-fantastic-potato-soup\/\">Absolutely Fantastic Potato Soup <\/a>(only 1 WW point\/ cup!!)<\/p>\n<p>Dinner- Mexican night<\/p>\n<p><strong>Friday<\/strong><\/p>\n<p>Breakfast- cereal and yogurt<\/p>\n<p>Dinner (date night)- Mac and cheese for the kiddos<\/p>\n<p><strong>Saturday<\/strong><\/p>\n<p>Breakfast- waffles, fruit<\/p>\n<p>Dinner- homemade ravioli with Tofu wrappers<\/p>\n<p>(I&#8217;ll try to post a recipe and how-to later)<\/p>\n<p><strong>\u00a0<\/strong><strong>Sunday<\/strong><\/p>\n<p>Breakfast- cereal, yogurt<\/p>\n<p>Dinner-chicken stir-fry<\/p>\n<p>Looking for more great menu plans?
