{"id":981,"date":"2008-11-09T20:11:11","date_gmt":"2008-11-10T01:11:11","guid":{"rendered":"http:\/\/www.momstoolbox.com\/blog\/?p=981"},"modified":"2008-11-12T11:40:43","modified_gmt":"2008-11-12T16:40:43","slug":"menu-planning-monday","status":"publish","type":"post","link":"http:\/\/www.momstoolbox.com\/blog\/menu-planning-monday\/","title":{"rendered":"Menu Planning Monday"},"content":{"rendered":"<p>Here&#8217;s what the 144 family will be dining on this week:<\/p>\n<p><strong>Monday<\/strong><\/p>\n<p>Breakfast- scrambled egg whites with cheese, smoothies (OJ, frozen berries, oatmeal)<\/p>\n<p>Lunch-<a href=\"http:\/\/www.thehappyhousewife.com\/butternut-squash-soup\/\">Butternut squash soup<\/a>, cornbread<\/p>\n<p>Dinner-roasted chicken, salad, broccoli<\/p>\n<p>** make bread, make extra soup for friends<\/p>\n<p><strong>Tuesday<\/strong><\/p>\n<p>Breakfast-banana smoothies, pancakes<\/p>\n<p>Lunch- Spinach salad with reduced fat feta, oranges<\/p>\n<p>Dinner- Salmon, couscous, spinach, cornbread<\/p>\n<p>** make breakfast cookies<\/p>\n<p><strong>Wednesday<\/strong><\/p>\n<p>Breakfast- breakfast cookies, yogurt drinks<\/p>\n<p>** This will be our first time to try these.<\/p>\n<p><span style=\"color: #339966;\">***Post note: I made these Tuesday and they were okay, but a little gummy the next morning. Anyone else have any good breakfast cookie recipes to share???<\/span><\/p>\n<blockquote><p><strong>Breakfast Cookies<\/strong><\/p>\n<p>2 \u00bd cup whole wheat flour<\/p>\n<p>\u00bd cup protein powder<\/p>\n<p>2 tsp baking powder<\/p>\n<p>\u00bc tsp ground cloves<\/p>\n<p>\u00bc tsp ground cinnamon<\/p>\n<p>\u00bd tsp ground nutmeg<\/p>\n<p>1\/8 tsp ground mace<\/p>\n<p>1\/8 tsp ground cardamom<\/p>\n<p>\u00bc tsp sea salt<\/p>\n<p>\u00bd cup agave nectar<\/p>\n<p>\u00bd cup olive oil<\/p>\n<p>4 egg whites<\/p>\n<p>\u00a0\u00bd cup unsulfured blackstrap molasses<\/p>\n<p>\u00bd cup applebutter or applesauce<\/p>\n<p>1 TBSP vanilla<\/p>\n<p>2 TBSP plain low-fat yogurt<\/p>\n<p>1 cup raisins<\/p>\n<p>1 cup unsalted, raw slivered almonds<\/p>\n<p>\u00bd cup unsweetened dried cranberries<\/p>\n<p>Preparation:<\/p>\n<ol type=\"1\">\n<li>Sift all dry ingredients and spices together in a large mixing bowl. Cream olive oil and agave nectar together until smooth.<\/li>\n<li>In separate bowl beat egg whites and add to olive oil mix. Mix well. Add molasses, applesauce, vanilla and yogurt and mix well. Combine wet and dry ingredients.<\/li>\n<li>Add raisins, cranberries and almonds. Mix and form dough into ball&#8230; it will be very thick.<\/li>\n<li>Wrap with plastic and refrigerate for about an hour. Preheat oven to 350. Line cookie sheets with parchment.<\/li>\n<li>Form batter into small balls. Place balls on cookie sheet on press down with fork. Bake 10 minutes, until lightly browned.<\/li>\n<\/ol>\n<\/blockquote>\n<p>\u00a0Lunch-tuna sandwich<\/p>\n<p>Kid dinner&#8211; secret spaghetti sauce (defrost) over spaghetti<\/p>\n<blockquote><p>The secret spaghetti sauce is a concoction I whipped up last week.<\/p>\n<p>My son doesn&#8217;t like red sauces, but I was determined to make it work last week. I threw carrots, onions and a half-jar of left over spaghetti sauce in the blender, then added a can of Italian seasoned diced tomatoes. This tasted good, but I was hoping to lighten the look up so I added a half can of kidney beans. I know, this sounds crazy, but I just had to try. It tasted a little bean-y so I added some tomato paste,\u00a0 whirred it some more, meanwhile browing turkey with Italian seasoning.<\/p>\n<p>I put it all together on top of spaghetti and all three kids asked for seconds! I had to boil more spaghetti and so I knew I needed\u00a0to freeze the leftover sauce! This was an amazing breakthrough!!<\/p>\n<p>You&#8217;ll never know unless you try&#8230;<\/p><\/blockquote>\n<p><strong>Thursday<\/strong><\/p>\n<p>Breakfast- yogurt and cereal<\/p>\n<p>Lunch-<a href=\"http:\/\/www.momstoolbox.com\/blog\/absolutely-fantastic-potato-soup\/\">Absolutely fabulous WW potato soup<\/a><\/p>\n<p>Dinner-<a href=\"http:\/\/www.momstoolbox.com\/blog\/menu-plan-september-1-7\/\">maple-brined pork chops<\/a>, apples, quinoa<\/p>\n<p><strong>Friday<\/strong><\/p>\n<p>Breakfast-Oatmeal or hot cereal mix<\/p>\n<p>Lunch- take boys out?<\/p>\n<p>Kid dinner-Pick your leftover night<\/p>\n<p><strong>Saturday<\/strong><\/p>\n<p>Breakfast-egg white omelet, turkey sausage<\/p>\n<p>Lunch- pizza (experiment)<\/p>\n<p>Dinner-beer can chicken on grill, cob corn on grill, cut fruit<\/p>\n<p><strong>Sunday <\/strong><\/p>\n<p>Breakfast-waffles<\/p>\n<p>Lunch- at birthday party<\/p>\n<p>Dinner- Turkey brats<\/p>\n<p>Looking for more meal-planning ideas?
