What can I do with so much chicken?

If you’ve been following along over here you might know that we cooked fajitas for lots of friends the other night.

Well, check out how much chicken we had left over:

Yes, that’s just the chicken we had left over.

We decided to go ahead and grill it all in the event that Gustav headed our way and took our power. Fortunately he did not.

As you can see we have lots of seasoned and cooked chicken breasts. So far we’ve eaten chicken nachos, soft tacos, quesadillas, fajita salad and even stir fry.

Does anyone have any other ideas as to what yummy things I can prepare with some of this?

Also, I’m a Weight Watcher, so I’d prefer your ideas be on the lower calorie side, if at all possible.

(Of course I’d love to chop it all up and make chicken pot pies, or a cheesy King Ranch casserole. But I need to keep it as healthy as possible. Any ideas?  I would love them.. because I’m about out of them.

  2. WW black bean salsa chicken. You can look it up on weightwatchers.com. It had black beans, diced tomatoes, and 2% ched. cheese. I’ve been making it for years. Everyone always comments on how good it is! Sounds like you got lots of great ideas. I’ll have to come back and look at the ideas when it’s grocery time again.

  3. I often pair my leftover chicken with salad for lunch the next day. I’ve been known to use it in fried rice and to chop it up, toss in some alfredo sauce and some pasta with green peas and mushrooms. Yum. Although, that might not be the best weight watchers wise. You could also do soups! I have to say also that grilled of fajita chicken is yummy with cottage cheese.

  5. Chop it up and mix it with some mayo, some chopped pecans, chopped artichoke hearts, and some celery salt. Then either bake it on garlic toast or put it in sandwiches/tortillas. Yum!

Freeze it in smaller servings- use it to make chicken pot pies (mix chicken with cream of chicken soup and 1 can of chicken broth, add one can mixed veggies drained and add to store regridge pie crust- bake 1 hour), BBQ chicken sandwhcichs, chicken ceasear salas and chicken salad (mix chicken with chopped onion, chopped green bell pepper, chopped grapes, and mayo)

  7. Invite me and all my hungry relatives over. We would happily help you out. We enjoy chicken quesadillas and BBQ chicken pizza.

  9. Chicken Grape Salad, Chicken Enchiladas, Teriyaki Chicken Salad, Rolled in tortillas with cheese and such, freeze and save for lunches…oh my, I wish I could share in your abundance!

  11. We like chicken enchiladas, chicken pot pie, chicken fried rice, etc. We use it with most any type chicken dish. If the recipe calls for cooking chicken, we just skip the step. :D

  13. I have a ton of cooked-chicken recipes but they are all in my cookbooks at home!!! I’ll email you some if you still need ideas when we get back home.

    My first thought when I saw these was salads, especially since you are on WW. Mix together some fresh greens, tomatoes, WW cheese, and get some low-fat dressing. Throw the chicken breast on top and you’ve got a healthy lunch or dinner.

    Mmmm, looking at all this chicken makes me wish we’d come your way for Gustav! :)

    That is one of my favorite recipes for left over chicken. They are baked, so it is a lot healthier than fried stuff. You can freeze the chicken too and then pull it out when you have a chicken recipe.

  15. Have you tried a chicken salad with yogurt dressing and fruit? Maybe this one? http://allrecipes.com/Recipe/Pineapple-Chicken-Paradise/Detail.aspx (Note: I have never tried this recipe, but it seemed to fit your needs)

    How about chicken BBQ calzones? Toss cubed chicken with barbecue sauce and onions and fold into a whole-wheat calzone pocket.

    I would chop it and freeze it in 2 cup portions…then when you need to make a casserole for a sick friend or a quick dinner, all you have to do is grab a bag.

  17. Glad you didn’t need that chicken for Gustav, for sure! I love making chicken salad, using low fat mayo and lots of celery, grapes and bell peppers…also, you can make a lower fat version of chicken parm by making spaghetti with tomato sauce, some grilled chicken and a bit of grated parm cheese on top!

    I’m also a fan of freezing extra food in “dinner sized” portions, great for hectics weeks when you just don’t have time to prepare something from scratch!

  19. Chicken pot pie can be healthy Amy….
    other ideas,
    Mexican chicken skillet (search on my blog)
    chicken burritoes
    chicken ceasar salad
    BBQ chicken sandwiches

    I would cut the chicken up into chunks and freeze it into (family) dinner sized portions. Then you can have chicken meals spread out over time because I am sure you are getting sick of it by now.

  20. Chicken soup – add carrots, celery, potatoes, green beans, whatever along with some chicken broth. toss in some pasta or wild rice.

  21. I love chicken salad sandwiches!
    Take that leftover chicken and shred it up and mix it with a bit of mayo, mustard, lemon juice and seasonings.
    I like to add some ‘crunchies’, like celery, apple, or a bit of nuts.
    On some toasted bread, or a lower calorie option, wrapped in a piece of Romaine lettuce with tomatoes and cucumbers, a yummy and healthy lunch!

  23. Have you tried Pasta with those chicken? You can use the wheat pasta or the lower carbs pasta. Cut up red, green and yellow peppers. Have basil, oregano. Fry the peppers with a bit of butter (or olive oil). slice the chicken into cubes or strips, stir it in, add cooked pasta. add herbs and seasonings. Add some more butter, some milk (low-fat will do too), sour cream. stir and eat. :)
