Creamy Chicken Enchiladas

Looking for something delicious and easy to make to add to your menu plan this week that’s definitely not turkey? I’ve got an answer for you: Creamy Chicken Enchiladas from Jessica Fishers new book, Not Your Mother’s Make-Ahead and Freeze Cookbook (NYM Series).

Jessica allowed me to share the recipe on my other site, VineSleuth Uncorked, a few weeks ago and I cannot tell you how many times our family has enjoyed that recipe ever since. They are easy enough that you can make one pan for tonight and another to freeze for later in about 30 minutes (And that’s even with my six year-old daughter ‘helping.’)
