Easy Beef and Cheese Quiche

Looking for an easy breakfast for your family? This one is easy to whip up and uses ingredients you probably already have. It’s perfect for entertaining or for Christmas morning and it makes a great light dinner, too.

Easy Beef and Cheese Quiche

Ingredients:

1 1/4 cups Heart Smart Bisquick mix

1/4 cup butter, softened

2 Tablespoons water, boiling

I Tablespoon olive oil

1 clove of garlic

1/2 pound (8 oz) ground beef

1 cup shredded 2% milk mexican blend cheese

1 1/2 cups whole milk

3 eggs

1/2 teaspoon salt

1/2 teaspoon pepper

** or instead of the salt and pepper, use a few cranks of a pepper and garlic blend

optional: Picante sauce

Instructions:

Preheat the oven to 400.

Grease bottom and side of a 9-inch pie pan. (I use Pam.)

Heat skillet and add 1 tablespoon olive oil.

Chop garlic clove and heat in skillet until fragrant.

Add ground beef and brown. Remove from heat.

Stir Bisquick and butter until well-mixed, then add 2 Tablespoons of boiling water. Stir until a soft dough forms. Press dough into and up the sides of prepared pie pan.

Sprinkle ground beef then cheese over dough.

Whisk the milk, eggs and seasoning in a bowl and pour into the crust.

Bake 35-40 minutes, until the edge is golden brown and center is set. Garnish with picante, if you like a little zing.

This recipe is the heartier cousin of another family favorite, my Canadian Bacon and Cheese quiche.
