Spicy, Sweet and Simple Salmon

Our family LOVES salmon at dinnertime.

Fortunately I think it is also the easiest thing I can make for them.

I spritz a bit of olive oil, sprinkle a bit of rub, pop in the oven, add pasta or couscous and a vegetable (typically broccoli) and we are good to go.

Sometimes I throw together a rub from scratch with whatever I can find in the spice rack. Lately, though, we’ve really gone the simple route by using Chef Paul Prudhomme’s Magic Seasoning Blends, the Seafood Magic variety, with a bit of brown sugar dusted on top. It’s just the perfect combination of spicy and sweet flavors. YUM!

    I use the Cooks Magazine’s way of broiling the fish and it is fabulous and quick – and it my families favorite.
    Heat the oven to 450, put in a cookie sheet/or baking pan for the salmon empty to get it really hot. Pull out, put on fish, lower temperature of oven to 250 and put the baking pan back in. The outside gets a great sear, and the inside is moist and tender…
