Light Strawberry Cupcake Recipe

Yesterday a friend of mine posted on Facebook about the cupcakes she was sending to school for her daughter’s class and how the kids would have no idea how low cal they were. (That’s her photo from Facebook right there. Doesn’t that cupcake look awesome?!)

Of course I had to investigate and she was kind enough to share. So today I present to you Nichole’s Light Strawberry Cupcake recipe:

Light Strawberry Cupcakes

Ingredients:

Cake

  • 1 box strawberry cupcake mix
  • 1 1/2 cups Sprite Zero

Topping

  • 1 cup lowfat milk
  • 1 box sugar free/fat free vanilla instant pudding
  • one tub light cool whip
  • Sprinkles ;)

 Instructions:

  1. Gently mix the sprite into the dry cake mix, that’s it, no eggs, oil or water! Pour 1/4 cup of batter in prepared cupcake liners and Bake at 350 degrees for around 18 minutes.
  2. For the topping, mix the dry pudding mixture and milk until thick. Gently fold in the whipping cream. (I added 4-5 drops pink food coloring to mine). Pipe onto cooled cupcakes and enjoy!

I’ve made super secret chocolate pumpkin muffins, that do not taste like pumpkin and are super moist and chocolatey.  And I think I’ll be making these strawberry cupcakes soon.
