My apologies to those among us who do not like fruit on your salad. Here’s another fruity one:

This week I intended to have basic taco salad, but, as I was cutting fruit for my kids to enjoy with their tacos, I got a little creative. And then I wanted some.

First, I chopped apples, pineapple and mango and combined them. And then I saw the fresh mint I had set out for a different recipe and snipped some to add to the fruit. I stirred it up, letting the juice of the pineapple coat the apples and prevent browning.

Next I lined my  bowl with romaine and red lettuce, added the fruit mixture and then added some chicken I had prepared in the crockpot earlier in the week.

(The chicken had been slow-cooked with salsa, Mexican-seasoned tomatoes, black beans and corn.)

I wish I had a photo to share with you. However I took the pictures with my phone and neglected to upload them right away. And today it stopped dialing out. So the people at the Apple store gave me a new one. (I didn’t expect that to happen. I just thought they would waive some magic wand and it it would work again. They were very nice.)

So bye-bye photos… including my fantabulous salad shot and several pics I shot of my daughter’s first REAL haircut this morning. (She went from way -below-shoulder-length to a chin-length bob.) But I digress. Big time.

Take my word: The salad was very refreshing with the mint and MUCH better for me than the many soft tacos I would have enjoyed alongside the kids. Instead I filled up on salad and then made myself one tiny soft taco. Ole!

And, on another note, I’m sorry I haven’t posted much SOAP lately. I will get back on track soon. There’s been a lot going on the 144 family lately. But things should start calming soon… at least to a dull roar.
