Seeking stick-with-ya breakfast ideas…Can you help?

I feel like we have fallen into a breakfast rut over here in the 144 household and was  hoping a few of you could help me out with some new ideas.

Do you have any ideas for protein-packed,  low-effort breakfasts I could prepare for my kiddos before heading off to school?

I’m looking for ideas that will fuel my kids for a full morning of fun and learning at school. This morning I thought I was sending them off with a filling breakfast that would keep them going, but then found my own stomach grumbling about an hour and a half later. Ummmm… OOPS!

So, please, help a mom out… What do you like to make and serve at your house that keeps your kids tummies topped off?

And just so I’m not taking without giving, I’ll offer our favorite energy-packed breakfast:

My whole family loves scrambled egg whites (sometimes I add in one whole egg for color), mixed with a bit of Italian seasoning, sprinked with cheddar cheese and sandwiched in  heated tortillas. Often I’ll add a bit of fruit on the side or pair it with a breakfast popsicle. Yummy, energy-packed AND portable (without the popsicle).

  1. Breakfast burritos

    Make up a large batch on the weekend, then freeze them individually wrapped in paper towels in a large ziplock – take one out when needed, nuke for about 2 mins and you are ready to go.

    I make these, and take one to work and heat & eat it there.

    Cook the scrambled eggs in a baking pan in the oven to save time – cut into rectangles. Add some cheese, some cooked bacon, sausage or ham and roll em up!

    You can also do egg McMuffin type sandwiches and freeze – I personally haven’t tried this though.

  2. I like baked oatmeal, which is portable, and steel cut oats made in the crockpot so they’re ready in the morning. Yum!

    Scrambled eggs plus two slices whole-wheat toast with butter and jam.

  4. I make Raisin Bran Bread 3 or 4 loaves at a time and store 1 on the counter, 1 in the fridge, the rest in the freezer to be defrosted later. Spread with nut butter (I like almond or cashew butter better than peanut) it’s very filling!

    My kids really like Irresistible Double Chocolate Muffins from http://www.allrecipes.com. They are made with whole wheat, flax and wheat germ and pumpkin. Lots of good stuff. They also LOVE Powerballs:

    Powerballs
    Makes 40-48

    1 c. peanut butter
    1 c. honey
    3 c. old-fashioned oats
    1/2 c. ground flaxseed
    1 c. chocolate chips
    1/2 c. chopped nuts, any kind
    1/2 c. soft dried fruit, any kind

    Mix together peanut butter and honey until smooth. Gradually add oatmeal and flaxseed. Add chocolate chips, nuts and dried fruit and gently mix in a stand mixer or smush together by hand.

    Roll into ping-pong size balls. Keep in fridge and they will freeze well too.

    I thought they would be a sticky mess but they are not. I wear gloves for rolling and make them small so the kids can pop the whole thing into their mouth. These are SOOOO good! I’ve been using walnuts and cranberries.

  7. I love to do smoothies for breakfast, especially chocolate. Flax seed adds some omega 3’s and staying power. Banana gives sweetness without the sugar. These last me all morning. Here’s my recipe:

    1 frozen banana
    1 heaping spoonful of unsweetened cocoa
    1 heaping spoonful of ground flax seed
    1 tsp vanilla
    1 tsp coconut oil
    milk or kefir (enough to cover)

    Blend until smooth. It should be thick enough to serve with a spoon. Serve in a parfait glass.

    For variety, and especially in summer, we’ll make island smoothies:

    1 frozen banana
    1/2 c canned pineapple
    1 tsp vanilla
    1 spoonful ground flax seed
    1 tsp vanilla
    milk or kefir to cover

    Blend until smooth. Serve in a goblet with an umbrella :0)

  8. While living in Switzerland, I learned of what is now one of my favorite breakfasts, even though we ate it for dinner there with bread. This is, Bircher Muesli. At night, add enough uncooked oats to a bowl that will feed everyone. Toss in any fruits you have on hand (chopped into bite-sized pieces), a bit of sugar if you like, and equal parts milk and yogurt. It should look a bit soupy, so that the oats can absorb the liquid. Allow to sit in the fridge overnight and in the morning, all you have to do is portion it out. I really enjoy eating it low-sugar using a flavored yogurt and omitting sugar altogether. Protein, fiber, fruit, what’s not to love!

  10. I make whole wheat cake donuts in a donut maker that my mom had from before I was born. They do make them still and I saw one at Macy’s They look like a waffle maker, but donut shaped. Easy to make, hold, and eat. Quite filling and can be made healthy.

  11. We love making things with whole wheat. We found that if we use finely ground hard white wheat, it works pretty well in most recipes. Whole wheat pancakes and waffles are easy and delicious.

  12. here’s the recipe link for the quiche, i use ham, and use cheddar sometimes instead of swiss, this recipe is great when you have leftover ham and want it in a different way and the crust is much easier than a standard quiche crust

  13. I’m all about quiche, ham and cheddar with a Bisquick crust, we have it for dinner and then leftovers for breakfast.

  14. We love granola with yogurt, and don’t skip on the granola (none of this sprinkle over top business, think equal parts).

    We also love granola oatmeal – 1 cup oats, 1 cup granola, 2.5 cups water in the rice cooker…I am sure this could be made on the stove too.

    Pancakes and french toast are big hits too….

    And, of course, fruit is a great side…I often do bananas for breakfast because they stick longer.

  16. Our current plan is to eat one “substantial” item and then one piece of fruit. So some days it’s oatmeal and fruit; other days it’s yogurt and fruit; some days it’s banana bread and fruit; and perhaps the other option is a muffin and fruit. It works for us!

  17. My kids love waffles with peanut butter and bananas. We also do whole wheat english muffins with nutella, non fat yogurt with frozen blueberries and a scoop of homemade granola, whole wheat pancakes with turkey sausage in between (kind of a sandwich), fried apples…I could go on =) Hope that helps!
